PLANTAIN

Adapted from Sommer Collier’s recipe here.

Ingredients

  • 1 plantain

  • Vegetable oil

  • Salt to taste

Serves 2 as a very tiny side dish.

Method

  1. Line baking sheet with parchment paper or aluminum foil.

  2. Peel the plantain and slice on an angle, 1/4- to 1/3-inch thick.

  3. Drizzle with oil and lightly salt.

  4. Transfer the plantain to the baking sheet, spacing out the pieces so they are not overlapping.

  5. Bake in toaster oven at 400°F for 20 minutes, turning halfway and watching closely to ensure the pieces don’t burn.

  6. Serve immediately.

Notes

  • If you’re using a conventional oven (versus a toaster oven), preheat the oven as the first step.
