CHIA SEED PUDDING

Adapted from Katie Wells’ recipe here.

Ingredients

Base recipe:

  • 1 cup milk (any kind)

  • ¼ cup (or 4 tablespoons) chia seeds

  • 2 tablespoons maple syrup or honey

  • 2 tablespoons raw cacao powder (optional)

  • ¼ tsp cinnamon (optional)

Topping ideas:

  • Fresh fruit (banana, berries, etc.)

  • Nuts

  • Dried coconut pieces or coconut flakes

  • Flaxseed

  • Hemp hearts

  • Seeds (pumpkin seeds, sunflower seeds, etc.)

Serves 1-2.

Method

  1. Put base recipe ingredients into a mason jar and shake gently.

  2. Place in the refrigerator for at least 4 hours or overnight.

  3. Shake a few times within the first hour to help it gel evenly.

  4. Garnish as desired.

Notes:

  • Recipe can be halved — or you can eat both servings yourself (I’ve definitely done that before!).
