Ingredients
½ cucumber, chopped into bite-sized pieces
A handful of grape tomatoes, cut into halves
2 teaspoons olive oil
1 teaspoon white vinegar
2-3 basil leaves, chopped (optional)
Salt to taste
Method
Add cucumbers and grape tomatoes to a bowl.
Drizzle olive oil and vinegar on top.
Season with a pinch of salt.
Toss everything to coat.
Garnish with fresh basil (if using).
Notes:
Cherry tomatoes also work well in this. They’re usually a little bigger so you may wish to cut them into quarters.
I often make a very simple version of this with just cucumber, olive oil, vinegar, and a pinch of salt — fresh and delicious!
