CUCUMBER SALAD

Adapted from Lauren Allen’s recipe here.

Ingredients

  • ½ cucumber, chopped into bite-sized pieces

  • A handful of grape tomatoes, cut into halves

  • 2 teaspoons olive oil

  • 1 teaspoon white vinegar

  • 2-3 basil leaves, chopped (optional)

  • Salt to taste

Method

  1. Add cucumbers and grape tomatoes to a bowl.

  2. Drizzle olive oil and vinegar on top.

  3. Season with a pinch of salt.

  4. Toss everything to coat.

  5. Garnish with fresh basil (if using).

Notes:

  • Cherry tomatoes also work well in this. They’re usually a little bigger so you may wish to cut them into quarters.

  • I often make a very simple version of this with just cucumber, olive oil, vinegar, and a pinch of salt — fresh and delicious!
