Ingredients
1 tablespoon vegetable oil
Half a large red onion, sliced thinly (you can use any type of onion other than the sweet ones)
1 pint of cherry tomatoes, cut into halves (cherry tomatoes are better for this dish but you can also use grape tomatoes)
A small log of goat cheese (140-150 grams)
Salt to taste
Balsamic glaze
Artisan crisps
Method
Sweat the onions by cooking gently in oil with a pinch of salt.
Add cherry tomatoes and cook until softened.
Meanwhile, spread the goat cheese on a large plate in a thin layer.
Spoon the onion and tomato mixture onto the layer of goat cheese.
Season another pinch of salt and drizzle with balsamic glaze.
Serve with artisan crisps — pile a generous amount of the goat cheese, onion, and tomato topping onto a crisp and enjoy!
