GOAT CHEESE APPETIZER

Adapted from my friend Melissa’s recipe.

Ingredients

  • 1 tablespoon vegetable oil

  • Half a large red onion, sliced thinly (you can use any type of onion other than the sweet ones)

  • 1 pint of cherry tomatoes, cut into halves (cherry tomatoes are better for this dish but you can also use grape tomatoes)

  • A small log of goat cheese (140-150 grams)

  • Salt to taste

  • Balsamic glaze

  • Artisan crisps

Method

  1. Sweat the onions by cooking gently in oil with a pinch of salt.

  2. Add cherry tomatoes and cook until softened.

  3. Meanwhile, spread the goat cheese on a large plate in a thin layer.

  4. Spoon the onion and tomato mixture onto the layer of goat cheese.

  5. Season another pinch of salt and drizzle with balsamic glaze.

  6. Serve with artisan crisps — pile a generous amount of the goat cheese, onion, and tomato topping onto a crisp and enjoy!
