OMELETTE BITES

Adapted from Gina’s recipe.

Ingredients

  • 6 large eggs

  • 1 tablespoon of water or milk

  • A handful of shredded cheese

  • A handful of diced bell pepper

  • A handful of diced ham

  • Salt and pepper to taste

Makes 12 omelette bites.

Method

  1. Preheat oven to 350°F.

  2. Add the water or milk to the eggs and beat until mixed. The liquid helps to create a more fluffy texture.

  3. Add the cheese, bell pepper, and ham to the eggs and mix.

  4. Portion out the egg mixture into 12 regular muffin cups. I use silicone cups as this recipe is prone to sticking but you can also use a well-greased muffin tin.

  5. Bake for 20–25 minutes or until set.

  6. Let cool slightly (these will be very hot) and enjoy!

Notes

  • This recipe is very versatile! You can change up the ingredients as you would with any omelette.
