Ingredients
6 large eggs
1 tablespoon of water or milk
A handful of shredded cheese
A handful of diced bell pepper
A handful of diced ham
Salt and pepper to taste
Makes 12 omelette bites.
Method
Preheat oven to 350°F.
Add the water or milk to the eggs and beat until mixed. The liquid helps to create a more fluffy texture.
Add the cheese, bell pepper, and ham to the eggs and mix.
Portion out the egg mixture into 12 regular muffin cups. I use silicone cups as this recipe is prone to sticking but you can also use a well-greased muffin tin.
Bake for 20–25 minutes or until set.
Let cool slightly (these will be very hot) and enjoy!
Notes
This recipe is very versatile! You can change up the ingredients as you would with any omelette.
