PICKLED CUCUMBERS

Adapted from Judy Ung’s recipe here.

Ingredients

  • ½ cucumber, sliced thinly

  • 2 tablespoons rice vinegar

  • 2 tablespoons water

  • 1 tablespoon soy sauce

  • 2 teaspoons sugar or honey

  • Dash sesame oil

  • Japanese spice powder (optional)

Method

  1. Combine all ingredients in a bowl.

  2. Mix well and leave in a cool place for at least 20 minutes.

  3. Serve as a little side dish.
